AN APPROACH TO A MICROBIOLOGICAL RISK ASSESSMENT IN THE POULTRY SECTOR IN TRINIDAD AgEcon
Dookeran, Mark M.; Baccus-Taylor, Gail S.H.; Akingbala, John A..
International studies and epidemiological data have revealed a strong association between salmonellosis and chicken meat. This association provides serious challenges for food safety and international trade. Microbiological Risk Assessment is a food safety tool that is used to determine the incidence of food borne illnesses. The procedure identifies a microbiological hazard in the entire food continuum (from farm to fork), and estimates the adverse effects to human health, of ingesting the microbial hazard. The Assessment integrates four steps, hazard identification, hazard characterisation, exposure assessment and risk characterisation, to produce a practical estimate of risk. In each step, knowledge of the prevalence and concentration of the pathogen,...

Guerreiro,EN; Giachetto,PF; Givisiez,PEN; Ferro,JA; Ferro,MIT; Gabriel,JE; Furlan,RL; Macari,M.
In the present study we have investigated the effects of heat acclimation on brain and hepatic Hsp70 protein levels and body temperature of broiler chickens in response to gradual heat stress. Two groups of broilers were raised up to 47 days of age under distinct temperature conditions: thermoneutral (TN, according to bird age) or hot environmental (HS, 31-33°C). At 46 days of age, the birds reared at high ambient temperature were transferred to thermoneutrality conditions. After 18 h, these birds and the birds reared at thermoneutral temperature were submitted to gradual heat stress in a climatic chamber so that environment temperature was increased from 28 to 40ºC at a rate of 2ºC/h. Colonic temperature was measured using a thermometer sensor probe at...

Casanova,Susana; Verdes,José Manuel; Okada,Kosuke.
The presence of Cryptosporidium spp. was detected in broiler chickens of 32-40 days of age, colonizing the bursa of Fabricius. The histologic study with haematoxylin and eosin staining was done on specimens of trachea, complete intestinal tract and bursa. Samples of intestinal content were also studied using Kinyoun staining technique. All birds with signs of illness were positive to the presence of parasite, showing a hypertrophic bursa of Fabricius, filled with caseous content. The bursal epithelial cells were full of different developmental stages of Cryptosporidium spp. This note describing the presence of Cryptosporidium spp. in industrial flocks of broiler chickens, is the first report of this parasite in Uruguay

Does low-protein diet improve broiler performance under heat stress conditions? Rev. Bras. Ciênc. Avic.
Furlan,RL; Faria Filho,DE de; Rosa,PS; Macari,M.
Nutrition for broilers under high temperatures is extremely important for brazilian broiler chicken industry because the amounts of consumed nutrients and environmental temperature have great effects on bird performance and carcass quality. Among diet nutrients, protein has the highest heat increment; thus, during many years, diets with low protein level were recommended in order to reduce heat production in broiler chickens under heat stress. However, reports have shown that low-protein diets have negative effects on broiler performance when environmental temperature is high, because during heat stress, low food intake associated to a low diet protein induce amino acid deficiencies. Other studies have shown that broilers fed low-protein diets increase...

Effect of deboning time on the quality of broiler breast meat (Pectoralis major) Rev. Bras. Ciênc. Avic.
Souza,PA; Kodawara,LM; Pelicano,ERL; Souza,HBA; Oba,A; Leonel,FR; Norkus,EA; Lima,TMA.
The present study evaluated the effect of different deboning times on the quality of broiler breast meat. Seventy-two broiler breasts were evaluated. They were distributed in a completely randomized experimental design, with six treatments, six repetitions and two birds per parcel. The treatments were denominated as follows: A - deboning immediately after chilling, B - deboning 1 h after chilling, C - deboning 2 h after chilling, D - deboning 3 h after chilling, E - deboning 4 h after chilling, and F - deboning 24 hours after chilling. Lowest pH values (p<0.05) were seen when deboning was performed 24 h after carcass chilling (pH=6.00) in comparison to deboning at 0 h (6.69) and 1 h (6.42) after chilling. R values were inversely proportional to pH...

Effect of energy intake on performance and carcass composition of broiler chickens from two different genetic groups Rev. Bras. Ciênc. Avic.
Rosa,PS; Faria Filho,DE; Dahlke,F; Vieira,BS; Macari,M; Furlan,RL.
In order to evaluate the effect of energy intake and broiler genotype on performance, carcass yield, and fat deposition, 600 one-day-old male chicks from two different genetic groups (AgRoss 308 - commercial line and PCLC - Embrapa non-improved line) were fed diets with different metabolizable energy level (2950, 3200 and 3450 kcal/kg). A completely randomized experimental design in a 2X3 factorial arrangement with four replications of 25 birds per treatment was applied. In order to ensure different energy intake among treatments within each strain, feed intake was daily adjusted by pair-feeding schemes. AgRoss 308 broilers had better performance and carcass yield, and presented lower abdominal fat deposition rate. In both genetic groups, the highest...
